Balsamic Chicken with Roasted Vegetables

Balsamic chicken with roasted vegetables

  • 10 (20 oz) boneless skinless chicken thighs (or breasts)
  • 20 medium asparagus, ends trimmed, cut in half
  • 3 red bell peppers
  • 1 cup carrots, sliced in half long way
  • 2 red onions, chopped in large chunks
  • 10 oz sliced mushrooms
  • 1/2 cup plus 2 tbsp balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • sea salt and pepper
  • 2 drops Rosemary essential oil – or 3 tbsp fresh rosemary
  • 2 cloves garlic, smashed and sliced
  • 2 drops Young Living Oregano essential oil – or 2 tbsp fresh oregano
  • 2  drops Young Living Thyme essential oil- or 2 tbsp fresh thyme
  • 4 leaves fresh sage, chopped

Add or delete ingredients…. this is one of those recipes where you can do that. We did not have any red peppers, so we did not use any.  I also did not have fresh sage, so that too was not a part of our ingredients.
